  1. It’s 500 gm of all purpose flour.
  2. It’s 2 of medium potatoes boiled and mashed.
  3. Prepare 2 tbsp of sugar.
  4. It’s to taste of salt.
  5. You need 2 tsp of yeast.
  6. You need 2 tbsp of oil.
  7. Prepare 250 ml of warm potato water.
  8. Prepare 1 tsp of onion seeds.
  9. It’s 1 tsp of sesame seeds.
  10. You need 2 tbsp of fried onion.
  11. You need 1 tsp of dried parsley.
  12. You need 1 tsp of rolled oats.

Rustic Potato Bread step by step

  1. Boil and mash the potatoes. Reserve the water..
  2. While the water is warm add sugar and yeast to it. Mix well and let it proof for 10 minutes..
  3. Add the yeast mixture, salt and oil to the mashed potatoes. Mix well. Add the flour and roughly knead it. The dough mein seem dry at first but do not add more water. Place in a airtight container and leave it to rise overnight..
  4. Next morning spread some flour on the working counter and flip the dough on it. Now you can add the onion seeds, sesame seeds, fried onions or any herbs if you wish. Knead the dough for 5 minutes. Grease and dust a baking dish. Place the dough in it. Cover with a towel and set aside to proof for 1 hour..
  5. Dust the dough with flour sprinkle oats and make cuts with a blade. Bake in a preheated oven at 220° C for 15 minutes then reduce the temperature to 200°C and bake dor another 35 minutes. Enjoy!.
