  6. Prepare 1/4 cup of cornstarch (32g).
  7. You need 1 tbsp of cold butter (14g).
  8. Prepare of Crust.
  9. It’s 31/3 cup of AP flour (450g).
  10. You need 1/2 tsp of salt.
  11. Prepare 16 tbsp of butter cubes.
  12. You need 6 of egg yolk.
  13. It’s 12/3 cup of powdered sugar (160g).
  14. It’s 1 tsp of vanilla.
  15. Prepare 2-4 of sliced fruits.
  16. Prepare 1/2 cup of Apricot jam plus 2 Tbsp of water.

  1. Make pastry cream first so it can chill and be great for later.
  2. In sauce pan heat milk and vanilla to a simmer boil. (As soon as it starts to boil) Remove from heat to infuse for 15 min..
  3. Whisk yolk and sugar until light and fluffy.
  4. Add cornstarch and whisk until no lumps..
  5. Temper the hot milk. Whisk quickly while SLOWLY adding hot milk. You don’t want to cook your eggs.
  6. Remove egg mix from sauce pan. Clean it out thoroughly and strain mix back into pan to cook.
  7. Cook over med-high heat whisking constantly until cream is thickened and starter to bubbly slightly. Once that happens remove from heat.
  8. Stir in butter. Let cool slightly Place in container Cover with plastic wrap. Make sure plastic is touching the cream so a skin doesn’t form in the fridge. Chill for 2 hours.
  9. Now to make the crust Preheat oven 320 F.
  10. In a mixer add cubed butter, sugar salt and vanilla to mix. Mix 2 minutes.
  11. Add yolks until Combined.
  12. Add flour and mix until just combined.
  13. Divide into 2 equal pieces Roll out dough to about 1/8 inch on lightly floured parchment paper and chill 1 hour. —Or you can form a disk then wrap in plastic and refrigerate that (easier).
  14. Spray tart pan and roll out dough And form it to pan the freeze 30 min.
  15. Place in oven to bake about 15-20 min until light golden brown.
  16. Let cool. Evenly divide pastry cream. Add diced fruit on top any way you please then brush fruit with apricot jam mixture and refrigerate to set. All done !!!.
