- You need of Sweet Potatoes.
- Prepare 1 of red onion, sliced.
- It’s 1 pound of ground beef (or any ground meat).
- It’s of 1 large yellow onion.
- Prepare of 4 garlic cloves.
- You need of Ground coriander.
- It’s of Aleppo pepper (or chili flakes).
- Prepare of Sumac.
- Prepare of Parsley.

Sweet Potato stuffed with spiced beef, tahini and parsley salad step by step
- Preheat oven to 400.
- Rinse and scrub sweet potatoes. Once preheated, place on baking sheet and roast until fork tender (~50 min).
- While potatoes are cooking, in a large pan heat olive oil. Add in ground meat, cooking until browned, add onion until soft, add garlic and cook 2-3 min. Add coriander, aleppo pepper & salt. Pour in some water and scrape up any brown bits.
- In a large bowl toss in parsley (roughly chopped or torn), red onion, lemon juice, sumac and salt. Do not do this too early as parsley will lose it’s texture.
- Once sweet potatoes are done, score with knife and open up with two spoons, top with meat, tahini and parsley salad.
