  1. Fit the food processor with the medium blade..
  2. Slice and process the Spanish onion. Reserve onion juice to add later, remove onion to a separate mixing bowl..
  3. Process carrots and celery, reserve to a separate mixing bowl..
  4. Make one cup vegetable broth from bullion, or use homemade. I use Better Than Bullion, you may have a favorite brand..
  5. Chop garlic, reserve..
  6. Remove stems from jalapeno and serrano (see tip).
  7. Slice each pepper lengthwise once, then slice each half lengthwise. Mince. (Don't forget to use gloves, and don't rub your eyes or any other sensitive area.) Reserve..
  8. In a large Dutch oven, heat 1 tbsp olive oil on medium heat till shimmering..
  9. Add onion, cook until soft, not brown..
  10. Add garlic and chile peppers, saute for 30 seconds in a separate part of the pot, then combine..

  22. Simmer on low heat for 30 minutes..
  23. Remove to 1 quart containers, cool for 1 hour..
  24. Add the soup, a quart at a time, to the food processor with its regular blade..
  25. Process for 30 seconds, or until the soup is mostly smooth, with a little texture left..
  26. Refrigerate..
  27. Have dental surgery..
  28. While recuperating, consume with a spoonful of sour cream and a pinch of red pepper flake for garnish..
