- You need 1/4 tsp of garlic powder.
- You need 1 1/2 of to 2 cups shredded cheese your choice – i use mexican blend.

- Preheat oven to 350.
- Melt butter in a frying pan. Saute onion & green pepper over medium heat for 10 -15 mins or until onion is translucent or browned – your preference. Remove from heat..
- Dice ham steak – remove any fat & casing on edges..
- Grease a 13×9 casserole dish. Evenly press in seasoned potatoes..
- Evenly spread onions, green peppers & ham on top of potatoes..
- In a medium bowl, whisk together 8 eggs, 1 cup milk, salt, pepper & garlic powder..
- Pour on top of casserole..
- Sprinkle on 1 1/2 to 2 cups shredded cheese..
- Bake, uncovered, 40 – 50 mins – till eggs are set & top is golden brown..
- Remove from oven – let sit for 5 – 10 minutes before cutting & serving. Salt & pepper to taste if desired..
