Ingredients of BIG Farmer Style Brunch

  1. It’s 1 tbsp of butter.
  2. Prepare 1 medium of sweet onion – diced.
  3. Prepare 1 large of green pepper – diced.
  4. It’s 1 of 20 ounce bag seasoned hashbrowns / shredded potatoes – i use jimmy dean.
  5. Prepare 3/4 lb of to 1 lb. smoked ham steak.
  6. Prepare 8 of eggs.
  7. It’s 1 cup of milk.
  8. It’s 1/2 tsp of salt.
  9. Prepare 1/4 tsp of pepper.
  10. You need 1/4 tsp of garlic powder.
  11. You need 1 1/2 of to 2 cups shredded cheese your choice – i use mexican blend.

BIG Farmer Style Brunch instructions

  1. Preheat oven to 350.
  2. Melt butter in a frying pan. Saute onion & green pepper over medium heat for 10 -15 mins or until onion is translucent or browned – your preference. Remove from heat..
  3. Dice ham steak – remove any fat & casing on edges..
  4. Grease a 13×9 casserole dish. Evenly press in seasoned potatoes..
  5. Evenly spread onions, green peppers & ham on top of potatoes..
  6. In a medium bowl, whisk together 8 eggs, 1 cup milk, salt, pepper & garlic powder..
  7. Pour on top of casserole..
  8. Sprinkle on 1 1/2 to 2 cups shredded cheese..
  9. Bake, uncovered, 40 – 50 mins – till eggs are set & top is golden brown..
  10. Remove from oven – let sit for 5 – 10 minutes before cutting & serving. Salt & pepper to taste if desired..
  11. This is a BIG breakfast – recipe can easily be cut in half. I usually make this on the weekends when I want to sleep in – breakfast & lunch served at once lol. Enjoy…psychobetty…XOXO..
